Cally's 1st day of Preschool

Cally had her first day of preschool today and had a great time! Cally is going to Schlitz Audubon Center here in Milwaukee and they are outside the majority of the time! Today they went on their first hike and played in a wooden "tree house" and homemade playdough! She had a blast, but Reese missed her like crazy, she screamed out when she saw Cally and gave her a huge hug and kiss, it was priceless. Needless to say Cally passed out within 5 minutes of getting home!!!

A Yummy Dinner

I am trying something a little different just to get some feedback! I am going to share with you a wonderful twist on the traditional lasagna and give it a south of the border twist!

You will need

Tortillas (preferably whole wheat)
2% Mexican Cheese
1 can of black beans
1 can of Rotell
1 avocado sliced
1 Lb. of lean ground turkey or meat whatever you prefer
1 can corn
1 can of garbanzo beans
1 can of enchilda sauce
You can add extra veggies if you want I added some zucchini and yellow squash do whatever sounds good to you!!

Directions:
In a oven safe pan spray with Pam then pour a thin layer of the enchilda sauce to coating the bottom of the pan

Layer your tortillas in one thin layer just as you would the noodles

Take your fully cooked ground meat and spread a thin layer, I also put some diced avocados in this layer as well then sprinkle generously with the Mexican cheese
and sauce

Layer the tortillas

Combine a bowl the beans, the Rotell, and corn and combine a layer of this next sprinkle with cheese and sauce

Repeat alternating the layers, go for as many as you want!!!
When you get to the last layer do the sauce and cheese and then take some low fat baked tortilla chips that have been crushed and sprinkle those over the top to provide some crunch! Then bake at 350 until the cheese has melted 15-20 minutes! Enjoy let me know what you think!!!!
